WHAT JAPANESE EAT IN THE STEAMY HOT SUMMER
After the long tsuyu (rainy season), steamy hot weather attacks Japan. People lose their appetite and they ultimately suffer from natsubate, summer exhaustion or summer lethargy. The best cure for natsubate is nothing but to eat well. After trying to find appetizing ingredients and ways of increasing their appetites, Japanese people finally established a solid summer cuisine.
1. SEASONAL FLAVORS
Cold noodles are a common summer food in Japan. Dipping cool noodles in cold sauce and slurping them is a summer ritual. Among the various types of noodle dishes such as hiyashi chuuka, zaru soba, zaru udon, hiyamugi and hiyashi somen, somen is probably the most popular one. The smooth texture of these vermicelli-like super fine noodles make them easy to swallow even for people who have no appetite. Especially when somen is served with ice cubes, it makes you forget about the heat!
Don’t forget unagi (eel) as another countermeasure against natsubate. With an abundance of vitamin A as well as B and C, unagi is traditionally believed to prevent natsubate among Japanese people. They have the custom of eating Unagi no Kabayaki on Doyou no Ushi, the middle day of the Doyou period according to the lunar calendar, thought to be the hottest time of the year. In 2008, it will be July 28th.
Although spicy ethnic foods are not original to Japanese culture, people love to eat them during the hot summer these days. Spicy foods from Southeast Asian countries have a different type of spiciness from Japanese spicy foods. They make people sweat more but people are willing to eat them because of the heat caused by the dishes.
2. NUTRITIOUS SUMMER INGREDIENTS
Japanese people love to eat seasonal products not only because they respect the sense of season but also because they know about the products’ nutritional benefits. Products in season taste the best and at the same time their nutritional value is the highest. Some summer vegetables in Japan are green pepper, tomato, cucumber, corn, okra, edamame, shishito pepper, eggplant and pumpkin. Momo (peach) and sakuranbo (cherry) are the queens of Japanese summer fruits. Those summer vegetables and fruits have more vitamins than those from other seasons, with more liquid inside that can prevent people from dehydrating. Also, they have the effect of helping the body cool down. Some of them contain nutrients that help stimulate digestion. Recently, vegetables and fruits from Okinawa, Japan’s southernmost island, have become popular. Nigauri, papaya, and siquwasa are refreshing as well as nutritious.
Like unagi, there also seasonal delicacies for fish such as ayu (sweetfish), kisu (sillago), tobiuo (flying fish), hamaguri (clam) and tako (octopus). Ayu no Shioyaki (Salted Sweetfish Grill) and Kisu no Tempura (Deep Fried Shillago) are favorite summer dishes in Japan.
3. SUMMER DESSERT
Although ice cream is a popular dessert in Japan like as in the West, people also enjoy traditional Japanese summer desserts such as anmitsu (kanten jelly with fruits and red bean paste in syrup), hiyashi zenzai/shiruko (cold red bean soup), mizuyoukan (cold red bean kanten jelly) and kuzukiri (arrowroot jelly in syrup). Most of them are only served during the hot season unlike ice cream, which can be found year-round. Therefore, Japanese people naturally connect these refreshments with summer.
4. APPETIZING PRESENTATION
One’s appetite also increases from the attention paid to presentation. When serving summer dishes, Japanese use plates that will create a cool effect; glass plates, bamboo sheets, green leaves and ice cubes are commonly used. Putting out only a small portion is also key to increasing appetite.
Since it’s located in a basin where the heat gets trapped, Kyoto, where I am from, is famous for its hot summer. So I can think of a lot of summer flavors: Kamo Nasu no Dengaku (grilled eggplant from the Kamo region with miso paste), Hiyayakko (cold tofu), Hiyashi Agedashi Nasu (deep fried eggplant with cold dashi broth) and Rei Shabu (cold shabu shabu). They are seasoned very lightly which is actually the style of Obanzai, or home cooking in Kyoto, and accordingly we enjoy the flavors of the ingredients to their fullest.
When it’s so hot that people lose their appetites, I believe it is especially important to make food look appetizing. I have a couple of tricks for this. First of all, choose cool-feeling tableware. I often use glass plates and luncheon mats made of bamboo to produce a cool feeling. Second, maximize the effect of ice. For example, place crushed ice on a glass plate, put a bamboo basket on the ice, and then place the dish on the basket. Also, portions should be small. An amount that makes people think, “I’d like to have a little more” is perfect.


Hiyashi Chuuka is a Chinese style cold noodle dish developed in Japan. Sweet and sour sauce over the noodles and a variety of toppings differentiate it from other Japanese cold noodles. Despite its Chinese origins, Hiyashi Chuuka has become a dish that is absolutely Japanese.
Unagi is believed to give stamina. Charbroiled unagi has a slightly smoky flavor, and its thick and sugary marinated sauce becomes caramelized in the broiling process. It’s usually served over steamed rice so that people can enjoy the sauce full of unagi essence until the very last grain.
During the hot season Japanese enjoy “mizugashi”, a generic term describing jelly, kanten, tokoroten, etc. as opposed to “yakigashi”, which means baked sweets.
